Our Story

Pop-Start Pizza is the product of two ‘90s kids who grew up on VHS tapes, video games, and late-night slices. To them, pizza was more than food — it was the soundtrack of growing up. That nostalgia still fuels everything they do. Today, they channel that spirit into a unique pizza style that merges the craft and romance of Italian Neapolitan tradition with the energy and edge of New York Slice.
Meet Justin

Meet Justin

Originally from Valders, WI, Justin Ulness trained at The Culinary Institute of America and honed his skills in Napa, New Orleans, and Charleston. Back in Northeast Wisconsin, he explored pop-ups, private chef work, and hospitality-focused concepts. Today, he channels his creativity into pizza, blending elevated technique with approachable, comforting flavors rooted in Italian tradition.
Meet Nathan

Meet Nathan

Originally from Milwaukee, Nathan Hulsey studied ceramics in Detroit before turning his hands-on creativity to pizza. With experience as a server, bartender, urban farmer, and merchandiser, he honed his understanding of craft and community. At Il Ritrovo, he mastered traditional Italian pizza-making, now bringing that creativity and hospitality to Pop-Start Pizza.
